Onion Pissaladieres Tarts

Ingredients

1 Sheet Frozen Puff Pastry, thawed

1 Large Egg, lightly beaten

2 tbsp Unsalted Butter

2 tbsp Olive Oil

1 tsp Fresh Thyme, chopped

1 Large Onion, sliced thin

2 tsp Anchovy Paste

Salt & Pepper

Parmesan Cheese, shaved

Nicoise Olives, sliced

Directions

1Preheat the oven to 425°F. Line a baking sheet with parchment paper.

2On a lightly floured board, roll the puff pastry out to remove the fold marks. Cut out 20 squares with a 2" cookie-cutter or you may use a round cookie cutter. Place the rounds on the baking sheet and brush with the beaten egg.

3Cover the squares with another piece of parchment paper, and place another empty baking sheet on top. This will help keep the dough from rising and cook the squares evenly. Place in the oven and bake for 20 minutes.

4Uncover and bake until golden brown, 2 to 3 minutes more. Transfer the squares to a large serving platter.

5Spoon about 1 teaspoon of the onion mixture over each, top with some shaved Parmesan. Garnish with an olive.
