Sicilian Burgers

Ingredients

Burger Patties

8 oz. Grass Feed Beef, ground

1 tbsp Marjoram, finely minced

1 tbsp Basil, finely minced

1 tbsp Oregano, finely minced

1/4 cup Parmesan, grated

1 1/2 oz. Julienne Sun Dried Tomatoes in Oil

Black Olives, finely chopped

Salt and Pepper

Butter, melted for brushing

2 Foccacia Buns

Baby Arugula

Fresh Mozzarella Ball

Basil Mayonnaise

1/2 cup Mayonnaise

2 tbsp Fresh Basil, chopped

Directions

Burger Patties

1In a large bowl, combine the beef,marjoram, basil, oregano, big pinch salt and pepper, olives, sun- dried tomatoes, Parmesan and black olives. Divide mixture in half and form two balls. Shape each one into a burger, cover with plastic wrap and chill for 30 minutes.

2Spray grill with nonflammable cooking spray. Preheat the grill to high heat. Brush the burgers with a little butter and cook them for 5 to 6 minutes on each side and cook until desired degree of doneness is reached.

3Place focaccia halves on grill and toast slightly. Remove buns and burgers from grill. Place the bottom of the focaccia bun on a plate and spread with basil mayonnaise and arugula. place burger on top. Tear off a piece of mozzarella to go on burger. Spread top piece of focaccia with basil mayo and then secure if necessary, with a toothpick on burger.

Basil Mayonnaise

1In a small bowl combine the mayo with the fresh basil. Stir and reserve for burgers.

Focaccia

1Cut the focaccia into squares large enough for the burgers and then slice in half to create a top and bottom.
